Bread & Butter Pudding (PKP 4.8L & 5.7L)
Stale bread probably normally ends up in the bin, but this recipe turns it in to a traditional comforting dessert.
Get creative by adding other dried fruits, you could even try spreading orange marmalade on the top layer of bread to take your pudding to the next level.
4 slices of white bread
25g unsalted butter
80g sultanas (or raisins)
2 tsp cinnamon
400ml whole milk
1 tsp vanilla essence
Use some of the butter to grease the inside of the inner pot. With the rest, butter both sides of the bread and tear in to small chunks.
Add half the bread, followed by half the sultanas and cinnamon. Repeat this step so you have a second layer.
In a bowl, whisk the eggs and sugar until thick and creamy. Gradually whisk in the milk then add the vanilla essence.
Pour the milk mixture over the bread. Put the lid on and close the pressure valve then select the STEAM function and adjust the time to 15 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
