Vegetable Pad Thai
Traditional Pad Thai will use fish sauce as well as soy sauce. Our veggie version leaves this out but if you want to make your Pad Thai more authentic just use roughly half of each.
Serve scattered with chopped peanuts and some lime wedges on the side for squeezing.
1 tbsp olive or cooking oil
1 onion, finely diced
1 red chilli, finely chopped
2 garlic cloves, crushed
2 tbsp brown sugar
5 tbsp soy sauce
250g rice noodles
3 spring onions, chopped
1 red pepper, sliced
1 orange pepper, sliced
1 lime, juiced
100g salted peanuts, chopped
500ml vegetable stock

Select the SAUTE function and press START, then add the oil and allow to heat. Add the onion, chilli and garlic and stir regularly for ~3 minutes until the onion begins to soften.
Add the beansprouts and stir to combine, then add the eggs and continue to stir until they have scrambled.
Stir in the sugar and soy sauce, then press CANCEL.
Add the rest of the ingredients, leaving half of the chopped peanuts aside for now, then stir to combine.
Close the lid, select the BAKE function, then adjust the time to 10 minutes and press START.
When the program has finished, open the lid and give everything a good stir before sprinkling with the remaining peanuts and serving.
