Ingredients
500g self raising flour
2 tsp baking powder
100g butter
60g sugar
300ml lemonade
1 lemon, zest and juice

The Method
Sieve the flour in to a mixing bowl then add the baking powder and butter. Use your hands to rub the butter in to the flour until it starts to resemble bread crumbs.
Stir in the sugar, lemonade, and lemon zest and juice until you have a soft dough.
Grease the inner pot with some extra butter to stop your dough sticking. Add the dough and flatten out so it cooks evenly.
Close the lid and select the BAKE function, then adjust the temperature to 120°C and the time to 45 minutes, then press START.
When the program has finished open the lid and carefully tip out your scone, then put it back in again the other way around to bake the top.

When the program has finished tip out your scone on to a board or cooling rack and leave to cool.
Once cooled, carefully slice in half horizontally and top with plenty of whipped cream and jam.
