The clue is in the name, this recipe is so quick and easy, and a great way to get green goodness in to the little ones. This is great for batch cooking, just double or treble the quantities and freeze for later.
Best served drizzled with cream and topped with pancetta or ham.
1 tbsp olive or cooking oil
1 onion, chopped
1 garlic clove, crushed
500g frozen peas
4 tbsp mint leaves, chopped
500ml vegetable stock (GF)
Salt and pepper (to taste)

Select the BROWNING function, add the oil and allow to heat. Add the onion, garlic and mint and stir regularly for ~3 minutes until the onion begins to soften, then press CANCEL.
Add the peas and stock, stir to combine and ensure nothing is stuck to the bottom of the pot.
Put the lid on and close the pressure valve then select the SOUP function and adjust the time to 5 minutes.
When the program has finished press CANCEL. For this recipe we recommend the SLOW RELEASE method before opening the pressure valve and removing the lid.
Leave to cool slightly then liquidise using a hand blender (or transfer to a blender) until as smooth as you like.
