Cochinita Pibil

A slow-cooked spicy-pulled pork recipe all the way from Mexico.

Serve in soft or crisp taco shells, topped with fresh guacamole and soured cream for cooling finish.

Ingredients

1.5 kg rindless pork shoulder, cut into 6 large chunks

1 red onion, roughly chopped

2 garlic cloves, peeled and crushed

2-3 tbsp chilli sauce

3 tbsp tomato puree

Juice of 2 oranges

Juice of 3 limes

3 tbsp white wine vinegar

2 tsp dried oregano

2 tsp ground allspice

2 tsp ground cumin

1 tsp ground nutmeg

The Method

Put all ingredients into a large, sealable freezer bag and squish until everything is well combined. Seal and leave to marinade in the fridge for at least an hour, ideally overnight.

Select the SAUTE function, adjust the time to 10 minutes, then press START. Add the pork and onions and stir occasionally for ~5 minutes until the pork is lightly browned, then press CANCEL.

Close the lid, select the SLOW COOK HIGH function, adjust the time to 3 hours 30 minutes, then press START.

Around half way through the cooking time, open lid and give everything a good stir, the close the lid and allow the program to finish.
