Ingredients
2 salmon fillets (about 150-200g each)
150g quinoa, rinsed
480ml vegetable or chicken stock
Bunch of spring onions, chopped
1/2 small lemon, sliced
1/2 small head of broccoli, cut into florets (approx. 75g)
1 tbsp oil
Salt and pepper to taste
Fresh herbs (like dill or parsley)

The Method
Set CleverPot to HIGH and add the olive oil. Sauté the spring onion for 1-2 minutes until softened.
Add the rinsed quinoa and stock to CleverPot. Stir well to combine and season with salt and pepper.
Place the steamer tray over the quinoa mixture. Arrange the salmon fillets on the tray and top with lemon slices and some of the herbs. Season with salt and pepper.
Add the broccoli florets to the steamer tray around the salmon.
Cover with the lid and switch to LOW. Steam the salmon and broccoli, and cook the quinoa for about 15-20 minutes, or until the salmon is cooked through, the broccoli is tender, and the quinoa is fluffy.
Carefully remove the steamer tray. Fluff the quinoa with a fork and garnish with fresh herbs if desired. Serve the salmon and broccoli over the quinoa.
