Ingredients
175g butter (softened)
85g brown sugar
85g granulated sugar
1 large egg, beaten
1 tsp vanilla extract
225g plain flour
½ tsp bicarbonate of soda
200g dark chocolate, cut into chunks

The Method
In a large bowl, beat together the butter and sugars until light and fluffy, (or use an electric whisk).
Add the egg and vanilla extract and beat until combined. Sift over the plain flour and baking powder. Stir until combined. Stir through the dark chocolate chips.
Roll the cookie dough into approximately 18-20 golf-sized balls – it will be a little sticky but this is fine. (Freeze the ones you want to cook later).
Line the air fryer basket with pierced baking parchment or a silicone mould.
Pre heat the air fryer to 160C (2-3 minutes).
Place 3 – 4 cookies in the air fryer basket allowing plenty of room for the cookies to spread. Set the air fryer to 160C and cook for 10-12 mins until the edges are just firm.
Allow the cookies to cool and firm-up a little in the air-fryer for a few minutes, then remove using a spatula and transfer to a wire rack to cool completely. Repeat with any remaining dough balls.
Note: You don’t need to turn the cookies
