Chickpea Tagine (CleverChef)
Traditionally cooked in an earthenware pot, we’ve adapted this classic Moroccan dish. A great-tasting healthy meal that’s packed with naturally sweet spices and goodness.
Best served with couscous, sprinkled with chopped parsley or mint.
1 tbsp olive or cooking oil
2 garlic cloves, crushed
2 tsp paprika
1 tsp ground ginger
1 tsp ground cumin
1 x 400g can chickpeas, rinsed
1 red pepper, deseeded and thickly sliced
1 onion, chopped
1 small butternut squash, peeled, deeded and cut in to chunks
2 courgettes, cut in to chunks
12 dried apricots
500g tomato passata
2 tsp honey
1 tsp harissa paste
Salt and pepper (to taste)

Select the SAUTE function, press START then add the oil and allow to heat. Add the garlic and spices and sir regularly for ~1 minute.
Add all the other ingredients and stir occasionally until the liquid begins to boil, then press CANCEL.
Select the SLOW COOK HIGH function and adjust the time to 2 hours, then press START.
When the program finishes, open the lid and give the stew a stir and season to taste before serving.
