Ingredients
1 tbsp olive or cooking oil
1 onion, finely chopped
2 garlic cloves, finely chopped
4 chicken breasts, diced
1 green pepper, sliced in to strips
150g baby plum tomatoes, halved
100g paella rice
200ml chicken stock
½ tsp oregano
1 pinch saffron threads (optional)
200g shell-on prawns (or 125g shelled prawns)
12 mussels in their shells
Salt and pepper (to taste)

The Method
Select the FRY function, press START then add the oil and allow to heat. Add the onion and garlic and stir regularly for ~2 minutes until the onion begins to soften.
Add the chicken and stir regularly for ~3 minutes to brown on all sides, then press CANCEL.
Add the pepper, tomatoes, rice, stock, oregano and saffron (if using) and stir to combine.
Put the lid on and close the pressure valve then select the RICE function and adjust the time to 5 minutes then press START.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Add the prawns and mussels and stir to combine. Put the lid on and close the pressure valve then select the RICE function and adjust the time to 3 minutes then press START.
