Ingredients
3 eggs
1 tbsp butter or oil
30g fresh spinach
Salt and pepper to taste
Fresh herbs or cheese for garnish (optional)
2 slices of sourdough, toasted

The Method
Place the spinach in the CleverPot steamer tray. Add a small amount of water to the base of the CleverPot and set it to HIGH.
Cover and steam for about 2-3 minutes until the spinach wilts. Once done, remove the spinach and set it aside.
In a bowl, whisk together the eggs, salt and pepper.
Drain the water from CleverPot, then set to LOW and add butter or oil. Let it melt and coat the bottom of the pot.
Pour in the egg mixture, let it sit for a few seconds, then gently stir with a spatula.
Stir occasionally until the eggs are softly scrambled, about 3-5 minutes.
Garnish with herbs or cheese if desired and serve with the spinach on some toasted sourdough.
