Roasted Butternut Squash and Chilli Soup

Butternut squash and chili soup is a harmonious blend of velvety, sweet butternut squash and a subtle kick of heat from chilli, creating a comforting and flavourful bowl of warmth for any chilly evening.

Ingredients

1 medium butternut squash, peeled, seeded, and cubed

2 tbsp olive oil

1 onion, chopped

2 cloves of garlic, crushed

1 red chilli pepper, chopped

950ml vegetable stock

1 tsp ground cumin

1 tsp ground coriander

Salt and black pepper to taste

Fresh coriander leaves for garnish (optional)

Sour cream or Greek yogurt for garnish (optional)

The Method

In a large roasting dish, combine the spices, onion and butternut squash. Drizzle with olive oil and season with salt and pepper. Toss them to coat evenly.

Roast in the oven for about 25-35 minutes, adding the crushed garlic and chilli for the last 5 minutes.

Add the roasted ingredients and stock to your Soup Maker.

Press the MODE button on the top of your Soup Makers lid to select EXTRA SMOOTH.

When the program has finished, open the lid and season to taste before serving.

Serve hot, garnished with fresh coriander and a dollop of sour cream or Greek yogurt if desired.
