Veggie Campfire Stew (PKP 4.8L & 5.7L)
This healthy campfire stew recipe is so wholesome and satisfying but keeps the calories down too.
Serve this stew with mashed or jacket potato, or chunky wedges.
2 tbsp olive or cooking oil
2 onions, peeled and diced
3 garlic cloves, crushed
3 peppers, de-seeded and chopped
1 tsp smoked paprika
1 tsp ground cumin
1 tsp ground coriander
1 x 420g can baked beans
1 x 400g can chopped tomatoes
1x 400g can kidney beans
1x 400g can butter beans
1 celery stick, chopped
2 large carrots, peeled and chopped
200g button mushrooms
2 tbsp tomato puree
1 tsp chilli flakes
1 tbsp Worcestershire sauce
Salt and pepper (to taste)

Select the SAUTE function, add the oil and allow to heat. Add the onions and garlic and stir regularly for about 2 minutes until the onion begins to soften.
Press CANCEL, then add the rest of the ingredients and stir to combine.
Put the lid on and close the pressure valve then select the STEW/SOUP function and adjust the time to 15 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Serve with mash, jacket potato, or chunky wedges.
