Ingredients
2 white fish fillets (e.g., cod, sea bass)
100g rice noodles
350ml chicken or vegetable stock
1 tbsp soy sauce
1 tbsp fish sauce
1 tsp grated ginger
1 clove garlic (crushed)
Juice of 1 lime
1 red chili (sliced)
Fresh coriander and lime wedges for garnish

The Method
Add stock, soy sauce, fish sauce, ginger, garlic, and lime juice to the pot. Bring to a gentle boil and add rice noodles. Cook for 3–4 minutes until tender.
Place the fish fillets on a steamer tray over the noodles, cover, and steam for 6–8 minutes until cooked through.
