Ingredients
½ small pack coriander
1 garlic clove
250g turkey mince
1 tbsp fish sauce
2 tbsp Thai tom yum or Thai red curry paste
400ml coconut milk
500ml chicken or 300ml vegetable stock
zest and juice 2 limes
300g pack stir-fry vegetable
200g pack cooked egg or rice noodle

The Method
Put the coriander stems and garlic in a food processor, pulse until finely chopped, add the turkey and 1 tsp of the fish sauce, and blend again. Roll into meatballs about 3cm in diameter.
Select the SAUTE function, heat the curry paste for 2-3mins.
Add the coconut milk, stock, lime zest and juice and remaining fish sauce , then cancel the SAUTE function.
Put the lid on and select the CHUNKY function.
After 5 minutes and the stir-fry vegetables.
When the program has finished, add the noodles. Select the SAUTE function and stir occasionally for ~2 minutes, then cancel the SAUTE function and season to taste before serving.
Season and pour into bowls and top with coriander.
