Ingredients
For the Pudding:
100g dates, pitted and chopped
120ml boiling water
30g unsalted butter, softened
100g brown sugar
1 large egg
125g plain flour
1tsp baking powder
½ tsp bicarbonate of soda
A pinch of salt
For the Toffee Sauce:
115g unsalted butter
100g brown sugar
120ml double cream

The Method
Place the chopped dates in a bowl and pour boiling water over them. Add bicarbonate of soda and let it sit for about 10 minutes to soften the dates.
In a separate bowl, cream together softened butter and brown sugar until well combined. Add the egg and mix until smooth. In another bowl, whisk together the flour, baking powder, and a pinch of salt. Gradually add the dry ingredients to the butter-sugar mixture, mixing well. Stir in the softened dates and the water they were soaking in.
Grease a microwave-safe dish. Pour the pudding batter into the dish.
Select the Microwave function, the power will be on full (HIGH P100), press Start to confirm the power. Adjust the cooking time to 7 minutes with the control knob, then press Start. Once done check the pudding is set by inserting a skewer into the centre, it should come out clean. Cook for a further 1-2 mins if needed.
To make the toffee sauce combine the butter, brown sugar, and double cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring each time, until the sauce is smooth and well combined.
Pour the toffee sauce over the warm sticky toffee pudding.
Garnish with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat!
