Ingredients
180g orzo pasta
475ml water
150g cherry tomatoes
75g cucumber, diced
½ red onion, sliced
50g feta cheese, crumbled
30g black olives, sliced
2 tbsp pesto
Salt & pepper

The Method
In a microwave-safe bowl, combine the orzo, water, and a pinch of salt.
Select the Microwave function, the power will be on full (HIGH P100), press Start to confirm the power. Adjust the cooking time to 9 minutes with the control knob, then press Start. Stir halfway through the cooking time.
Drain any excess water and set aside to cool.
While the orzo is cooking, prepare the vegetables. Slice the cherry tomatoes, cucumber, spring onions, and black olives.
In a large bowl, combine the cooked and cooled orzo with the cherry tomatoes, cucumber, red onion, feta cheese, and black olives.
Add the pesto sauce to the bowl and toss everything together until well coated. Adjust the amount of pesto to suit your taste.
Season the salad with black pepper and additional salt if needed.
