Ingredients
4 tbsp unsalted butter
115g dark chocolate (70% cocoa or higher), roughly chopped
50g granulated sugar
2 large eggs
60g plain flour
A pinch of salt
1 tsp vanilla extract
1 tsp instant coffee powder (optional, enhances chocolate flavour)
Cooking spray or a little extra butter for greasing

The Method
Grease four microwave-safe mugs or ramekins with cooking spray or a bit of butter.
In a microwave-safe bowl, combine the butter and chopped dark chocolate.
Select the Microwave function, then turn the control knob to adjust the power to medium high (M.HIGH P80), press Start to confirm. Turn the control knob to adjust the cooking time, then press Start. Microwave in 20 - 30 second intervals stirring after each interval, until the chocolate and butter are completely melted and well combined. Be careful not to overheat.
In a separate bowl, whisk together the sugar, eggs, flour, salt, vanilla extract, and, if desired, a small pinch of instant coffee powder. Combine until the batter is smooth.
Gradually add the chocolate and butter mixture to the batter while stirring continuously. Mix until you have a silky, smooth batter.
Divide the batter equally into the prepared mugs or ramekins.
One at a time, microwave each mug on high power (HIGH P100) for about 40-60 seconds. The centre should still be slightly molten when done. Cooking times can vary, so keep a close eye on it to avoid overcooking.
Serve the puddings warm immediately after cooking. You can add a scoop of vanilla ice cream or a dusting of powdered sugar for an extra touch.
