Ingredients
2 small soft tortilla wraps
2-3 tbsp salsa
30-50g grated cheese
1 tbsp coriander, chopped
2-3 tbsp sweetcorn
2-3 tbsp kidney beans
1/2 red pepper, sliced
1/4 tsp cumin
1/4 tsp paprika

The Method
Spread the salsa over the two tortillas, add the coriander, sweetcorn, pepper, spring onion, kidney beans, spices and half the cheese and roll up.
Preheat the 5 Minute CleverChef, place the enchiladas inside and close the lid, cook for 3 minutes, then sprinkle the rest of the cheese on top and cook for a further 1-2 minutes.
