Ingredients
1 small onion, chopped
2 cloves garlic, crushed
1 medium carrot, sliced
1 small potato, diced
1 small courgette, chopped
1 stalk celery, chopped
75g frozen peas
½ tin chopped tomatoes
700ml vegetable stock
1 tbsp olive oil
Salt and pepper to taste
Fresh herbs for garnish (optional)

The Method
Set CleverPot to HIGH and heat the olive oil. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.
Stir in the carrot, potato, courgette, and celery. Sauté for another 3-4 minutes.
Add the chopped tomatoes and vegetable stock, season with salt and pepper and allow to simmer for 15 minutes.
Add the peas, switch to LOW, cover with the lid, and simmer for 20-25 minutes until the vegetables are tender.
Garnish with fresh herbs if desired and serve hot.
