Ingredients
1 tbsp oil
1/2 small onion, chopped
1 clove garlic, minced
1 carrot, sliced
1 small potato, diced
1/2 courgette, chopped
Handful of green beans, trimmed
350ml vegetable stock
1 tbsp tomato puree
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
Fresh parsley for garnish (optional)

The Method
Set CleverPot to HIGH and add the oil. Sauté the chopped onion and garlic for 2-3 minutes until softened.
Add the sliced carrot, diced potato, courgette, and green beans. Stir and cook for 3-5 minutes until the vegetables start to soften slightly.
Stir in the tomato puree, then add the vegetable stock, thyme, and bay leaf. Stir everything together.
Switch down to LOW, cover with the lid, and let the hot pot simmer for about 30 minutes, or until the vegetables are tender. Stir occasionally and add more water if necessary.
Once the vegetables are tender, remove the bay leaf. Season with salt and pepper to taste.
Garnish with fresh parsley before serving with bread or on its own.
