French Onion Soup (Pressure King Pro 5L)
French onion soup might seem a bit retro but when made well it is delicious classic soup. The key is to let the onions caramelise properly, and while the star anise isn’t exactly traditional it does take this soup to the next level.
For the best flavour, grill slices of baguette topped with Gruyere or Emmental cheese and float these in the soup when serving.
2 tbsp butter
6 onions, thinly sliced
1 tbsp brown sugar
2 star anise
1.5L rich beef stock
2 tbsp red wine vinegar
1 tbsp cornflour
Select the SAUTE function and adjust to 25 minutes, add the butter and when melted add the onions, sugar and star anise. Cook for about 20 minutes, stirring occasionally to ensure the onions don’t stick to the pot.
Add the red wine vinegar, beef stock, cornflour and stir to combine, then press CANCEL.
Put the lid on and close the pressure valve then select the STEW/SOUP function and adjust the time to 5 minutes.
When the program has finished press CANCEL. For this recipe we recommend the SLOW RELEASE method before opening the pressure valve and removing the lid.
