Ingredients
200g straight to wok udon noodles
250g minced pork
65g peanut butter
2 tbsp soy sauce
1 tbsp chili sauce (adjust to taste)
1 tbsp honey or maple syrup
2 cloves garlic, crushed
1 tbsp oil
1 pak choi, sliced
100g mangetout
1 red chilli, sliced
Salt and pepper to taste
Chopped peanuts and coriander for garnish (optional)

The Method
Set CleverPot to HIGH and add oil. Add the minced pork and cook for about 5-7 minutes, breaking it apart with a spatula, until browned and cooked through. Season with salt and pepper.
Stir in the minced garlic, chopped pak choi, mangetout, and sliced red chili. Sauté for 2-3 minutes until the vegetables are tender.
In a small bowl, mix together the peanut butter, soy sauce, chili sauce, honey (or maple syrup), and a bit of water to thin it out if needed.
Add the udon noodles to the pot. Pour the peanut sauce over the noodles and toss everything together until well coated. Cook for another 2-3 minutes to heat through.
Garnish with chopped peanuts and cilantro if desired. Serve hot.
