Ingredients
2 tbsp olive or cooking oil
800g lean diced beef
1 onion, sliced
100g Shemin’s Indian Curry Paste
1 x 400g can chopped tomatoes
1 x 400ml can coconut milk
1 handful coriander, chopped
1 lime, zest and juice
Salt and pepper (to taste)

The Method
Select the SAUTE function, press START, then add half the oil and allow to heat. Add the beef and rotate to brown on all sides for ~5 minutes, then remove and set aside.
Add the rest of the oil followed by the onion and stir regularly for ~5 minutes until the onion has softened.
Add the Shemin’s Curry Paste and a splash of water and continue stirring for a further 3 minutes.
Add the tomatoes and coconut milk and stir to combine then press CANCEL.
Put the lid on and select the SLOW COOK HIGH function and adjust the time to 4 hours.
When the program has finished, open the lid, give you curry a good stir and season to taste before serving.
