Shakshuka

Ingredients

3- 4 eggs 

1 tin chopped tomatoes 

1 small onion, chopped  

2 cloves garlic, crushed 

1 pepper, chopped 

1-2 tbsp harissa or paprika 

1 tsp cumin 

1 tbsp oil 

Salt and pepper to taste 

Fresh herbs (like coriander or parsley) for garnish 

Crusty bread for serving (optional)

The Method

Set CleverPot to HIGH and add the oil. Add the chopped onion and pepper, and sauté for about 3-4 minutes until softened. Add the crushed garlic and cook for another minute.

Stir in the diced tomatoes, harissa (or paprika), cumin, salt, and pepper. Simmer for about 5-7 minutes until the mixture is heated through and slightly thickened.

Use a spoon to create small wells in the tomato mixture for the eggs.

Carefully crack the eggs into the wells.

Cover CleverPot with the lid and switch to LOW. Cook for about 10-12 minutes, or until the eggs are set to your liking.

Garnish with fresh herbs and serve hot with crusty bread if desired.
