Ingredients
2 chicken breasts, cut into bite-sized cubes
6-8 wooden skewers (soaked in water 10 mins)
Salt and pepper, to season
1-2 tbsp oil
For the satay sauce (Clever Chop)
3 tbsp peanut butter
1 small garlic clove
1 cm piece fresh ginger
1 tbsp soy sauce
1 tbsp lime juice
1 tsp brown sugar or honey
100ml coconut milk
Optional: ½ tsp chilli flakes or 1 small green chilli
Optional: splash of water to thin

The Method
Make the satay sauce in the Clever Chop: Pulse garlic, ginger, and chilli until finely chopped. Add peanut butter, soy sauce, lime juice, sugar, and coconut milk. Pulse until smooth. Add a little water if needed to thin.
Pour the sauce into the Clever Pot or a small saucepan. Heat gently on low, stirring occasionally while you cook the chicken.
Cook the chicken skewers: Brush or toss chicken with a little oil and season with salt and pepper. Grill on a pan, under the grill, or in the Clever Pot on Sauté, turning frequently, until golden and cooked through (about 10–12 mins).
Serve: Arrange skewers on plates and pour or brush warm satay sauce over the top. Optional: serve with steamed rice, cucumber ribbons, or a fresh salad.
