This ratatouille recipe is great as a side to steak or chicken, but also works on its own with rice or crusty bread for an easy healthy dinner.
Take your ratatouille to the next level by squeezing the juice of a lemon over before serving.
5 tbsp olive or cooking oil
2 aubergines, chopped
4 courgettes, chopped
1 red pepper, chopped
1 yellow pepper, chopped
1 red onion, thinly sliced
3 garlic cloves, crushed
1 x 400g can chopped tomatoes
1 tbsp red wine vinegar
1 tsp caster sugar
1 handful fresh basil
Salt and pepper (to taste)

Select the BROWNING function, add the oil and allow to heat. Add the aubergine and stir regularly for ~3 minutes until softened.
Add the courgettes, peppers, onion and garlic and stir for a further ~3 minutes, then press CANCEL.
Tear up the basil and add half, along with the sugar, vinegar and tomatoes.
Put the lid on and close the pressure valve then select the STEW function and adjust the time to 3 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
