Ingredients
200g rice (long-grain or basmati)
1 tsp oil
1 small onion, chopped
2 cloves garlic, crushed
1 tbsp peri peri seasoning
480ml vegetable or chicken stock
1 pepper, chopped
Salt and pepper to taste
Fresh coriander for garnish
Lime wedges for serving (optional)

The Method
Set CleverPot to HIGH and add the oil. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until softened.
Stir in the chopped pepper and cook for another 2-3 minutes.
Add the rice, peri peri seasoning, and stock. Stir well to combine.
Cover the CleverPot with the lid, switch to LOW, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to ensure the rice absorbs the liquid evenly.
Fluff the rice and season with salt and pepper to taste. Garnish with fresh coriander and serve with lemon wedges if desired.
