Pak Choi and Tofu Ramen

Ingredients

170g – 200g instant ramen noodles  

800ml vegetable or chicken stock 

1 small onion, sliced  

2 cloves garlic, crushed 

200g firm tofu, cubed 

2-3 pak choi,sliced 

2 tbsp soy sauce 

1 tbsp miso paste 

1 tsp sesame oil
Toppings: sliced spring onions, boiled eggs,
nori (seaweed), chili oil, or fresh herbs

The Method

Set CleverPot to HIGH and add a bit of oil. Add the sliced onion and minced garlic, and sauté for 2-3 minutes until softened.

Add the cubed tofu to the pot and cook for another 2-3 minutes, gently stirring.

Pour in the STOCK and stir in the soy sauce and miso paste.

Switch to LOW, cover with the lid, and let it simmer for about 10 minutes.

Add the pak choi and ramen noodles to the pot. Cook for an additional 3-5 minutes, or until the noodles are tender.

Drizzle with sesame oil (if using) and stir. Serve hot, topped with sliced spring onions, boiled eggs, nori, chili oil, or fresh herbs.
