Ingredients
2 tbsp butter
1 garlic clove, crushed
2 tbsp plain flour
250ml milk
250g cheddar cheese, grated
½ tsp cayenne pepper
Salt and pepper (to taste)

The Method
Select the SAUTE function, add the garlic and butter, then stir until the melted butter begins to melt, then press CANCEL.
Add the flour and stir to combine until a paste has formed.
Select the SAUTE function again and gradually stir in the milk in batches.
Once all the milk has been added, stir in the cheese and cayenne pepper and continue stirring until all the cheese has melted, then season to taste before serving.
