Feta Bouyiourdi

This is one for the feta fans. An entire block of feta, baked with hot pepper, onion and tomato.

It makes a wonderfully indulgent starter served with chunky slices of sourdough. Ramiro peppers pack a punch so you might want to use reduce the amount depending on your tastes.


2 tomatoes, sliced

1 red onion, thinly sliced

1 ramiro pepper, sliced

1 tbsp oregano

1 slice of feta

1 tsp chilli flakes

4 tbsp olive oil

The Method

Line the base of the inner pot foil so it comes half way up the base.

Arrange half the tomatoes, followed by half the onion and pepper, then sprinkle with half the oregano.

Lay the feta on top, then arrange the rest of the tomato, onion and pepper on the top.

Drizzle with the oil then sprinkle with the rest of the oregano and the chilli flakes.

Close the lid, select the BAKE function and adjust the time to 30 minutes, then press START.
