Chicken & Chorizo Paella
A tasty alternative paella recipe if seafood isn’t your thing. This dish works best served in the middle of your dinner table so everyone can dive in.
Serve scattered with chopped parsley and lemon wedges around the side.
1 tbsp olive or cooking oil
1 red pepper, diced
1 onion, finely chopped
2 garlic cloves, finely chopped
2 chorizo sausages, sliced in to discs
2 chicken breasts, chopped in to cubes
250g paella rice
1 x 400g can chopped tomatoes
1 tbsp paella seasoning
1L chicken stock
125g frozen peas
Salt and pepper (to taste)
Scatter with chopped parsley and serve with a lemon wedge on the side.

Select the FRY function, press START, then add the oil and allow to heat. Brown the chorizo for ~2 minutes then set aside on some kitchen roll.
Add the chicken, red pepper, onion and garlic and stir for ~3 minutes until the pepper and onion begins to soften, then add the rice and stir to toast slightly.
Add the tomatoes, stock and paella seasoning and stir to combine, then press CANCEL.
Put the lid on and close the pressure valve then select the RICE function and adjust the time to 10 minutes, then press START.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Select the FRY function, press START then add the peas and chorizo and cook for a further 3 minutes, then press CANCEL.
