Ingredients
2 tbsp olive or cooking oil
500g diced beef
1 onion, finely chopped
2 garlic cloves, finely chopped
1 carrot, chopped
1 celery stick, chopped
8 pickling onions or small shallots (skin left on)
2 tsp fresh thyme (or 1 tsp dried thyme)
1 bay leaf
1 tbsp Worcestershire sauce
400ml Guinness (or any beer of your choice)
Salt and pepper (to taste)

The Method
Select the FRY function, press START, then add half the oil and allow to heat. Add the beef in batches and rotate regularly for ~3 minutes until browned, then set aside.
Add the remaining oil along with the onion, garlic, celery, carrot, thyme and bay leaf and stir regularly for ~2 minutes until the veg begin to soften.
Add the Worcestershire sauce, beer, beef, pickling onions, stir to combine, then press CANCEL.
Put the lid on and close the pressure valve then select the MEAT function, adjust the time to 25 minutes, then press START.
When the program has finished press CANCEL. For this recipe we recommend the SLOW RELEASE method before opening the pressure valve and removing the lid.
