Ingredients
200g pasta (spaghetti, penne, or your choice)
150g cherry tomatoes, halved
1/2 small onion, finely chopped
2 cloves garlic, crushed
1 tbsp olive oil
1/2 tsp dried oregano or Italian seasoning
480ml vegetable or chicken stock
Salt and pepper to taste
Fresh basil or parsley for garnish
Grated Parmesan cheese

The Method
Set CleverPot to HIGH and add the olive oil. Add the finely chopped onion and minced garlic, sautéing for 2-3 minutes until softened.
Stir in the halved cherry tomatoes and dried oregano or Italian seasoning. Cook for another 1-2 minutes.
Add the pasta and stock. Stir to combine.
Cover the pot with the lid, switch to LOW, and let it simmer for about 15-20 minutes, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed.
Season with salt and pepper to taste. Garnish with fresh basil or parsley and grated Parmesan cheese if desired.
