Ingredients
500g rhubarb, trimmed and cut into 2-3cm pieces
75g caster sugar (adjust to taste)
1 tbsp cornflour
1 tsp vanilla extract or zest ½ orange (optional)
For the crumble topping (Clever Chop):
80g plain flour
60g cold unsalted butter, cubed
40g light brown sugar
40g crunchy granola (your choice – nutty or honey works great)
Pinch of salt

The Method
Preheat oven to 180°C (160°C fan). Place rhubarb pieces in an ovenproof dish. Sprinkle over sugar, cornflour, and vanilla (or orange zest). Mix to coat evenly and spread out in the dish.
Make the crumble topping in the Clever Chop. Add the flour, cold butter cubes, brown sugar, and salt to your Clever Chop. Pulse in short bursts until the mixture looks like coarse breadcrumbs. Add the granola and pulse once or twice more — just enough to mix through without crushing it completely (you want chunks for texture!).
Sprinkle the crumble mixture evenly over the rhubarb. Bake for 35–40 minutes, until the topping is golden and the rhubarb is tender and bubbling.
Let it cool slightly before serving with custard, ice cream, or Greek yogurt.
