Ingredients
150g sugar
1 orange, zest & juice
180ml olive or cooking oil
60ml brandy (optional)
800g plain flour
1 tsp baking powder
1 tbsp ground cinnamon
340g runny honey
200g sugar
375ml water

The Method
In a mixing bowl, combine the sugar with the orange zest.
Add the oil and stir to combine, then stir in the orange juice and brandy (if using).
Gradually sieve the flour, baking powder and cinnamon in to the liquid until a wet dough forms.
Take golf ball sized chunks of mixture and use your hands to roll them in to balls.
Add them to the inner pot then lightly press to form disc shapes, you might have to cook them in batches so there’s enough room in the pot.
Close the lid, select the BAKE function, adjust the time to 30 minutes, then press START.
Half way through the cooking time, rotate your cookies and bake for the rest of the program.
When the program has finished, open the lid, remove your cookies and set aside to cool.
Add the ingredients for the syrup and select the SAUTE function. Stir regularly for ~4 minutes to dissolve the sugar.
Cancel the SAUTE function then dip your warm cookies in the syrup for ~30 seconds to soak up the syrup.
Remove the cookies and leave to completely cool before serving.
