BBQ Pulled Jackfruit (PKP 4.8L & 5.7L)
This is such a good meat alternative for those meat free Mondays. The trick is to make sure you properly mash the jackfruit in step 6 so it best resembles pulled pork.
This is best served in tacos or tortillas topped with lettuce, salsa, and some jalapeños if you like the extra heat.
1 tbsp olive or cooking oil
1 red onion, finely chopped
3 garlic cloves, crushed
1 tsp cumin
1 tsp cinnamon
1 tbsp smoked paprika
1 tbsp chipotle paste
1 tsp oregano
2 x 400g cans of jackfruit, drained and rinsed
1 x 400g can chopped tomatoes
4 tbsp BBQ sauce
Select the SAUTE function, add the oil and allow to heat. Add the onions and garlic and stir regularly for about 3 minutes until the onion begins to soften.
Add the cumin, cinnamon, smoked paprika, chipotle paste and oregano and combine for a further 1 minute, then press CANCEL.
Add the jackfruit, chopped tomatoes and BBQ sauce and stir to combine.
Put the lid on and close the pressure valve then select the STEW/SOUP function and adjust the time to 15 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Use a potato masher to break up the jackfruit to ensure it is properly shredded.
Serve in tacos or tortillas topped with lettuce, salsa, and some jalapeños if you like the extra heat!
