Ingredients
220g cooked chicken breast, roughly chopped
3 tbsp mayonnaise
1-2 tsp mild curry powder
1 tbsp mango chutney
2-4 dried apricots
(optional: 1 tbsp natural yoghurt, for a lighter mix)
Salt & pepper to taste
Suitable for: Clever Chop
The Method
Add the cooked chicken to the Clever Chop bowl and pulse a few times – the chicken can still be in bigger chunks at this stage.
Add the mayonnaise, curry powder, mango chutney, apricots, and optional yoghurt. Pulse once or twice more to mix — or stir through by hand if you want a chunkier texture.
Taste and adjust with salt and pepper.
Perfect in sandwiches, wraps, or spooned over a baked potato or salad.
