Homemade Baked Beans

Ingredients

1 tin white beans (like butter or cannellini), drained 

1 small onion, finely chopped 

2 cloves garlic, crushed 

1 tbsp tomato puree 

1 tbsp brown sugar or maple syrup 

1 tbsp Worcestershire sauce (or soy sauce) 

1 tsp mustard (Dijon or yellow) 

1/2 tsp smoked paprika (optional) 

240ml vegetable stock 

Salt and pepper to taste 

Fresh parsley for garnish (optional)

The Method

Set CleverPot to HIGH and add a bit of oil. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.

Stir in the tomato puree, brown sugar, Worcestershire sauce, mustard, and smoked paprika and stir.

Add the drained beans and vegetable broth, stirring to combine.

Switch to LOW, cover with the lid, and let it simmer for 20-30 minutes. Stir occasionally, and add a bit more broth if it gets too thick.

Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley if desired.
